The Secondhand Table : Valentines Breakfast
It’s hard to believe that Valentine’s day is just around the corner! Winter is flying by, and I’m not complaining! It’s time for another edition of The Secondhand Table! If you’re joining me from Ally’s page -welcome!
This year it has been hard for my husband and I to secure quality time for just the two of us. The only quiet time we really have for just the two of us is the early morning before the girls wake up. So, I decided that I would make us a romantic breakfast for two for this round of The Secondhand Table.
The first thing I did was scour through my china cabinet to see what I already had, and I found some treasures! I found our wedding cake forks and serving knife, and I thought they would be the perfect addition to the table. We haven’t used them since our wedding day 9 years ago!
The dished and glassware are all Goodwill finds. The plates and mugs I found a few months ago, and I picked up the adorable oval dish and champagne coupes a few weeks ago. I have been looking for coupes like this for so long, and finally found them in the bottom of a Goodwill bin. Sometimes you have to dig!
For the table decor, I was a little stumped as to what to do, but then I remembered all of the leftover roses I had from a video shoot last week. They were almost on their way out, but I cut the stems very short and gently arranged them in a vintage ceramic planter. I think they look so pretty, and to think I was about to throw them out! I also clipped a few blooms from my hellebore plants to decorate with. I love that they are in bloom now - perfect timing!
For the breakfast I made my famous (well, famous to my kids) fluffy vegan pancakes in heart shapes (buy the mold here), cut some fresh strawberries into hearts, and poured us a little champagne topped off with some Morello cherry juice and a strawberry slice. Sweet and simple. I love this pancake recipe because it freezes and reheats really well, so I can make a big batch on the weekends and reheat them in the toaster oven during the week.
Here’s the recipe: (Makes about 6 small pancakes)
Fluffiest Vegan Pancakes
1 c. all-purpose flour
1 tbsp. sugar
1 tbsp. baking powder
1/2 tsp. salt
1 c. unsweetened almond milk
1 tbsp. liquefied coconut oil (can use melted oil)
1 tsp. vanilla extract
1 tbsp. apple cider vinegar
In a large bowl mix together all of the dry ingredients.
In a medium bowl combine almond milk, oil, vanilla, and vinegar. Whisk together and add to dry ingredients.
Whisk all of the ingredients together until just mixed and let sit for 5 minutes.
Heat griddle or frying pan on lowest heat setting. Rub a little oil onto the pan surface with a paper towel then pour the batter. Let the top of the pancake bubble and start to form a light skin, and then flip and cook through.
Serve with your favorite pancake accouterments!
